Seven Spice Chickpea Velvet

I came across some chickpeas and experimented with them until I made something delicious. But what IS it???

It’s sort of like a bar, but softer. Kind of like cheesecake, but without any dairy. It could be a dessert, but I often eat it for breakfast. Whatever it is: it’s silky and delicious and I call it chickpea velvet. Also, other people like it too!

Seven Spice Chickpea Velvet

Makes one 8 by 8 inch pan (about 6-8 servings)

Ingredients:

2 cups well-cooked chickpeas

¼ cup oil

1 banana

2 tsp vanilla

1 tsp salt

1 1/2 tsp Moroccan Seven Spice (similar to pumpkin pie spice, but with cardamon and black pepper)

2 eggs

⅓ cup coconut sugar

½ cup dark chocolate chips or chopped chocolate

Instructions:

Blend everything in a food processor except the chocolate. Pour into a buttered 8 by 8 inch pan and sprinkle the chocolate on top. Bake at 350 for 20-25 minutes or until a fork comes out smooth. Let cool and slice into squares. The squares should be soft but firm. Store in the fridge.

Variations:

Sometimes I eat this with a scoop of vanilla ice cream!
